Filling
- 1 lb (450 g) breakfast sausage (pork or turkey)
- 8 large eggs
- 2 tbsp milk (or cream)
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper
- 1 1/2 cups shredded cheese (cheddar, Colby Jack, Monterey Jack)
Wraps
- 8 flour tortillas (8-inch “soft taco” size)
- 2 tbsp butter or oil (for toasting in skillet)
Optional Add-Ins
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 cup baby spinach, chopped
- 1/2 cup salsa (drain slightly to avoid sogginess)

Instructions
- Cook sausage: In a skillet over medium heat, cook sausage until browned and fully cooked,
breaking it into crumbles. Drain excess grease and set aside. - Scramble eggs: Whisk eggs with milk, salt, and pepper. In a nonstick skillet over medium-low heat,
scramble until just set and still soft (don’t overcook—eggs finish as you toast the wraps). - Combine filling: Stir cooked sausage into the eggs, then remove from heat.
- Assemble: Lay tortillas flat. Sprinkle a little cheese down the center, add a scoop of sausage-egg mixture,
then top with more cheese. - Roll: Fold in the sides, then roll tightly like a burrito.
