These Sausage, Egg & Cheese Breakfast Roll-Ups are the kind of morning hero you can make once and enjoy all week.
You get fluffy scrambled eggs, savory sausage, and melted cheese wrapped up into a warm, handheld roll—like a breakfast
burrito’s cozier, simpler cousin. They’re perfect for busy mornings, school days, road trips, and meal prep, and you can
customize them with veggies, different cheeses, or even a spicy kick.

Prep: 15 min • Cook: 12–15 min • Total: 30 min

Makes: 8 roll-ups • Difficulty: Easy

Ingredients

Filling

  • 1 lb (450 g) breakfast sausage (pork or turkey)
  • 8 large eggs
  • 2 tbsp milk (or cream)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded cheese (cheddar, Colby Jack, Monterey Jack)

Wraps

  • 8 flour tortillas (8-inch “soft taco” size)
  • 2 tbsp butter or oil (for toasting in skillet)

Optional Add-Ins

  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup baby spinach, chopped
  • 1/2 cup salsa (drain slightly to avoid sogginess)
  • Hot sauce or red pepper flakes

For Serving

  • Salsa, pico de gallo, or ketchup
  • Hot sauce
  • Sour cream (optional)

Instructions

  1. Cook sausage: In a skillet over medium heat, cook sausage until browned and fully cooked,
breaking it into crumbles. Drain excess grease and set aside.
  2. Scramble eggs: Whisk eggs with milk, salt, and pepper. In a nonstick skillet over medium-low heat,
scramble until just set and still soft (don’t overcook—eggs finish as you toast the wraps).
  3. Combine filling: Stir cooked sausage into the eggs, then remove from heat.
  4. Assemble: Lay tortillas flat. Sprinkle a little cheese down the center, add a scoop of sausage-egg mixture,
    then top with more cheese.
  5. Roll: Fold in the sides, then roll tightly like a burrito.
